Technology description including background system Once the tomatoes arrive to the processing company, the manufacturing process begins with washing the berries in tanks to remove all foreign material. Then, the berries are deposited on sorting tables, where the staff works to discard unsuitable fruit (insubstantial, with color defects, or small sizes). To take place, these operations use large amounts of running water, optical sorters and workers. Later on, tomatoes come in contact with the peeler to detach the skin from the pulp. After this stage they undergo a new selection and only the best berries are canned in jars filled with juice and hermetically sealed, to be sterilized. Primary (North Italian supply chain) and secondary (literature and/or industry data) data representative of the North Italian supply chain in terms of geographic characteristics and technologies used (machinery, equipment, etc.) were collected. Inventory data were collected as physical quantities of materials used in different processes. Benefits from the use of secondary materials produced by recycling waste materials (e.g., plastics and cardboard) were excluded. Background data were modelled according to Ecoinvent v. 3.8
